Fun Recipe with Mache!

Recipe: Mâche Salad with Roasted Beets, Feta, and Hazelnuts

April Cooking Tip:

Dress tender greens at the very last minute

Delicate greens like mâche, baby spinach, arugula, and butter lettuce wilt quickly once they hit oil and acid.

Toss your salad right before serving, and your greens will stay fresh, lively, and beautiful on the plate.

Repurpose those greens! Wilted dressed greens actually work great warmed up in a pan as a quick sauté, stirred into pasta, or added to eggs
